Foodie Review: Pumpkin Spice Pancake Recipe

It's cold and dark outside and the leaves have well and truly turned. There's no better way to start those days than with a special breakfast and autumnal spices. Here's my very simple guide for making your own Pumpkin Spice pancakes at home in just a few minutes. 

I don't usually share recipes on here but I've always been a lover of cooking and baking. With the arrival of my most favourite kitchen accessory, a Pumpkin-shaped pancake maker, I thought now would be a good time to start. Pancakes are very much a staple in my house - they're delicious, quick and easy. With autumn well and truly upon us, what better excuse than to mix it up and add a little pumpkin spice? It couldn't be simpler. 

Ingredients 

280g Plain Flour 
1 tsp of baking powder
2 tbsp pumpkin spice 
43g of sugar 
1/4 tsp of salt 
4 eggs 
113ml of milk
1 tsp of vanilla extract 

Method  

Preheat your pan or mini pancake/waffle maker to high heat. Melt a very small knob of butter to grease the pan and lower the heat to medium level. 

Mix together your baking powder, pumpkin spice, sugar and salt in a small bowl and set aside. 

For the batter, add your eggs, flour and milk to a mixing bowl to and mix together with a whisk or electric mixer until thick and has the consistency of honey. Make sure your mixture has no clumps and if your mixture is too runny, add some more flour. Alternatively, if it is too thick, you may need to add more milk. 

Once your batter is complete, add your bowl of dry ingredients (baking powder, pumpkin spice, sugar, salt) to the batter a bit at a time and stir until completely mixed in before adding more. Once it is all mixed in, add your vanilla extract and stir again. You may add more vanilla depending on your taste preference.  

To cook your pancakes, spoon 3 large tbsp in to the pan in a circular shape or to your pancake maker, and leave for 2-3minutes. Once golden brown (or to the colour of your liking), flip it over and leave for further few minutes. If you're using a pancake maker, close the lid and wait for around 5 minutes. Remove the pancake with a safe cooking tool so not to burn yourself. And enjoy. 

It really is that easy. Once you've cooked your pancakes, serve with a topping of your choice. My personal favourites include whipped cream, fruit, jam or little lemon juice and powdered sugar.  

You can see from my own pancakes that I've used the Dash Pumpkin Waffle Maker to make mine. This is super simple to use; just plug it in to turn it on, create whichever batter mix you like, add just 3 tbsp per pancake, wait a few minutes and done. This isn't in anyway sponsored but I'm just so impressed with it and, at just £10, it was easily one of the best things I've ever purchased for my kitchen. Plus those little pumpkin pancakes are ever so pleasing to look at. For all UK readers though, remember to be careful with voltage when it comes to using electrical products from the US. I purchased an American adapter for when using mine. 

Some of you may consider these waffles but this recipe makes for soft, fluffy pancakes whilst waffles tend to be harder and not floppy. If you'd like to make waffles instead, you can cook these for longer  and add butter to the recipe for a sturdier cake-like structure.
