Feta Stuffed Meatballs

Here is a great meatball recipes to make instead of your regular Meatballs.  Since it takes a little longer to stuff the meatballs with feta I always make a huge batch.  You can easily double the batch and freeze these.  But I never make less than this batch below and it always lasts me for at least 2 dinners for 3 people.   They heat up great, just put in the oven for 20 minutes in 350F. Depending on the season I make different side dishes to match these meatballs.  I always make a Greek Salad, but then maybe hummus, Tzatziki/yogurt garlic sauce, simply grilled zucchini, or eggplant Parmesan.  Lots of things will go with this.  If you need some extra carbs you could add pita bread or potatoes.

Feta Stuffed Meatballs

Yield: 20 Meatballs

Prep Time: 30 minutes

Cook Time: 20 minute

Ingredients:

1 lbs ground beef
1 lbs ground lamb
1 cup finely chopped Italian Parsley
1 finely chopped yellow onion
2 gloves of garlic finely chopped
½ cup of Gluten Free Bread crumbs (you can use regular breadcrumbs)
1 tsp paprika
1 tbsp oregano
1 egg
Salt
Pepper
0.5 lbs of feta for stuffing
Ghee for frying

Directions:

Put the ground beef in a bowl with finely chopped parsley, finely chopped onion, finely chopped garlic, bread crumbs, 1 egg, paprika, oregano, salt, and pepper and mix well with your hands.

Use large spoon or a round ¼ cup measuring cup.  Grab ¼ cup of meat and put about 1 tsp of feta in the middle and close the meatball, place aside.

Once all the meatballs are made turn on your frying pan to start heating up.  Add ghee into the frying pan.  Then place the meatballs into the frying pan with about ½ inch apart.  You might have to do this several times depending on the size of your pan.  Then let them slightly brown.  Usually takes about 3 minutes on each side.  While we wait turn on the over to 350F to heat up.  Once the first batch of meatballs are done place them into a Pyrex pan and do this with the other batches as well.  When all done put all the meatballs in the oven for 15 minutes to evenly heat them and cook them through.

Serve with your favorite salad, or potatoes or side dish.  I usually eat these with Tzatziki sauce/yogurt garlic sauce, hummus and a simple Greek Salad.
