Do you remember when I shared all those new yummy General Mills cereals? I made easy no-bake cereal bars from the Chocolate Peanut Butter Cheerios and Banana Nut Cheerios. Mmm… those cereal bars are so dang good!
Along with the Chocolate Peanut Butter Cheerios and Banana Nut Cheerios, General Mills also came out with Lucky Charms Frosted Flakes cereal. YES, I said Lucky Charms AND Frosted Flakes all in one delicious box of breakfast cereal.
I know, I know. The flavor combination sounds a bit odd, and at first bite, it kind of makes you go, “hmmm…” But we’re now on our second or third (I’ve lost count) box of Lucky Charms Frosted Flakes and I’m kind of diggin’ it.
Speaking of lucky, lucky for you I’ve discovered another way to eat Lucky Charms Frosted Flakes cereal. It’s perfect for those who don’t like milk because the only milk involved is the totally optional glass of milk that pairs deliciously well with these Lucky Charms Frosted Flakes cookies.
Yes, I prefer chocolate chips in my cookies, but I totally made some straight-up Lucky Charms cookies before and they were so good. I had to see if I could make another tasty version using this magically delicious cereal. The verdict? It totally worked. And if you have a serious sweet tooth, you’ll love these Lucky Charms Frosted Flakes cookies.
These cookies are soft and chewy with the slightest of crunch due to those Frosted Flakes all crumbled up in the cookie dough. You also have oatmeal, which adds a nice texture, and of course a sprinkling of crumbled colorful marshmallows. My kids thought they were really fun and perfect for their highly-adapted sweet tooth, and I bet they’d be a total hit at any St. Patrick’s Day parties you’re hosting this year!
Lucky Charms Frosted Flakes Cookies
Lucky Charms Frosted Flakes cookies are soft and chewy with a hint of crunch and a smattering of sweet thanks to those crispy flakes and colorful marshmallows. NOTE: This dough requires chilling.
- 1/2 cup unsalted butter, softened
- 1/2 cup sugar
- 1/2 cup brown sugar, packed
- 1/3 cup canola oil
- 1 large egg
- 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp vanilla extract
- 1/2 cup quick-cook oats
- 2 cups all-purpose flour
- 1 1/2 cups Lucky Charms Frosted Flakes cereal

Line a baking sheet with parchment paper; set aside.

Cream butter and sugars together in large bowl. Add oil; mix until smooth. Add egg and vanilla; mix until thoroughly combined. Stir in baking soda and salt.

Add oats and flour and mix until just combined. Stir in Lucky Charms Frosted Flakes cereal. Note: The mixer will crush the flakes and crumble the marshmallows. We like the cookies that way but if you want larger marshmallows, i.e., whole pieces, gently fold them in.

Use a medium cookie scoop to scoop balls of cookie dough and place them on the baking sheet. (You can space them close together because you’ll be baking them on a separate cookie sheet.) Cover with plastic wrap; chill at least one hour.

Preheat oven to 350 degrees. Line a separate baking sheet with parchment paper or silicone baking mat.

Remove cookie dough from fridge and let sit 5 minutes before baking. Place cookies 2 inches apart on baking sheet. Bake 10 to 12 minutes or until edges just barely start to turn golden brown. Cool 2 minutes before removing to a wire rack. Store in an airtight container up to 5 days.
