Fiesta Weekend

This past weekend has been in full party mode🎉 I celebrated one of my very close friend's 16th birthday (again happy bday Amber!), volunteered w/ Books for Africa (awesome awesome awesome experience) had a fantabulous tutoring sess w/ my tutoring student/tutee, got to have sleepover w/ my little god sister b4 school starts, went to the spa, and completed loads of work in prep for next week. But as we say on the internet, "If you didn't take pics, it didn't happen." However yours truly did have a camera on hand to capture one of my busiest weekends to date (not really tho lol). So let me introduce the "Fiesta Weekend Slideshow"!

baby bird, coined Tweet. We found her/him on the ground in front of our house (lots of baby birds having been dropping from their nest) after Mia attacked her😢. Ik that you shouldn't allow birds into  your hands but she hopped into mine after the dogs started getting all curious about her.

And that's ends the "Fiesta Weekend Slideshow"! I hope you enjoyed it:) But what there's more....
I've mentioned multiple times how I LOVE to cook (and eat😉), but I've never really shared pics and recipes w/ you guys yet. Well, if you been waiting then you're in for a treat (literally)! Here's two meals w/ recipes and pictures that made this weekend even more fiesta-like. Let's begin again lol!

😍Recipe #1: Kiwi Lemon French Toast w/ Creme Anglaise😍


Truly a delicious breakfast and easy to make!

Ingredients: 10 pieces of brioche bread (soft and sweet), 3 eggs, 1/4 cup of lemon juice, 1/2 cup of Coconut milk or milk, 2 tablespoons of melted butter and butter for cooking, dash of cinnamon, dash of cloves, vegetable oil 3 sliced kiwi, optional amounts of creme anglaise

Recipe:
1. Mix all wet ingredients together and spices. TIP: Slowly add melted butter and whisk quickly.
2. Melt butter on medium-high pan while quickly dipping brioche in egg mixture (no one want soggy toast). Add to pan. ANOTHER TIP: Add however many pieces will fit on your pan. Best is usually two.
3. Brown each side and remove from pan.
4. Cut each piece diagonally and placed layered upon each other. Place pieces of kiwi as a a sweet decorate around your french toast. Drizzle w/ generous amounts of creme anglaise.
5. Seriously ENJOY!

🍛Recipe #2: General Tso's Chicken w/ Veggie Fried Rice 🍛


Easy dinner for five!

Ingredients: about 1.5 pounds of chicken tenderloin, 1 1/2 cup of bread crumbs (panko is the best but I had to improvise), 1 cup of corn starch, garlic seasoning, Coconut Oil, 3/4 cup of coconut milk, 4 eggs, General Tso's sauce, 2 cups of long grain rice, 4 green onions, frozen mix vegetables, salt

Recipe for General Tso's Chicken:
1. Heat oven to 400° F.
2. Thaw chicken tenderloin. Cut bite sized pieces at diagonals.
3. Spread a healthy layer of coconut oil onto a baking sheet.
4. Whisk two eggs, coconut milk, and a pinch of salt. Mix bread crumbs, corn starch, garlic seasoning, and a pinch of salt.
5. Drench chicken pieces into egg mixture then dry mix. Place on oiled pan.
6. After coating all chicken pieces, place filled pan into oven.
7. Bake for about 15 minutes, then flip each piece. Let cook other side for 15 minutes.
8. While chicken is cooking, warm sauce on stove on low-medium heat.
9. Slice thinner end of green onions thinly. Save other end.
10. Remove chicken from oven and place into a bowl. Coat with warmed sauce.
11. Serve w/ sliced green on top.

Recipe for Veggie Fried Rice:
1. Lightly toast the long grain rice in a generous amount of coconut oil. 
2. Add 3 cups of water and let cook like a regular rice recipe.
3. Slice thicker end of green onion and sautéed in coconut oil. Add frozen veggies into pan.
4. Whisk two eggs and add to vegetable mix. 
5. Add cooked rice, a spoonful of coconut oil, salt to taste, and a dollop of General Tso's sauce (for color).
6. Serve w/ General Tso's Chicken and DEVOUR!

We just had this for dinner tonight, and it def going on my "repeat to eat" list😂 I hope you enjoyed these recipes and try them out. Tweak them! Eat them! Critique them! It's really up to you lol. My mother posted a pic of her food on Facebook, and everyone was agreeing how good it looked.
