Recipe Intro
Roasted Brussels Sprouts are an amazing wintertime and autumnal dish. Above all, Brussels sprouts are highly nutritious. For instance, Brussels sprouts have huge amounts of antioxidant. One particular study, for example, concluded that eating two cups of Brussels sprouts per day, reduces damage at the cellular level by nearly 30%. In other words, by eating Brussels sprouts regularly, you can minimize the impact of free radical damage to your cells! Why take expensive supplements, when the antioxidants your body needs are right there in your own garden or supermarket? Here, I present to you my favorite way to prepare this healthy, cruciferous vegetable. It’s very easy to do, especially if you’ll be using the oven at the same time, for example, while roasting a chicken or turkey.
Roasted Brussels Sprouts w. Thyme and Tarragon
- 1 pound Brussels sprouts
- 2.5 tablespoons coconut oil
- 2 tablespoons fresh thyme, finely chopped
- 2 tablespoons fresh tarragon, finely chopped
- Salt and pepper
The process…
Wash the Brussels sprouts, cut off the ends, and slice into halves. In other words, like this, they will cook more evenly.
Toss with the coconut oil, the herbs, and salt and pepper. For example, see the image below.
Transfer to a baking sheet and bake at 350°F for about 25 minutes or until the Brussels sprouts are tender. In addition, you can test them with a fork to understand when they are done.
