Here’s a simple, delicious way to prepare roasted Chicken. I’m a big fan of basters and this recipe definitely benefits from having one on hand. While baking, you’ll want to periodically remove the dish and baste the chicken and mushrooms with the juices.
Chicken Mushroom Supreme
- 2 pounds bone-in chicken
- 1/2 pound button mushrooms, sliced in halves
- 2 small onions, thinly sliced
- 1-inch piece of ginger, peeled and thinly sliced
- 2 cloves garlic, pressed
- 1/4 cup tamari
- 3 tablespoons worcestershire sauce
- 3 tablespoons dijon mustard
- 2 tablespoons bacon fat
- 1 tablespoon dried basil
The process…
Mix all the ingredients except the bacon fat.
Arrange the mixture in a baking pan. Put the bacon fat on top. Bake at 350F for about 90 minutes. Periodically, remove the pan from the oven and use a baster to baste the chicken and mushrooms with the liquid in the pan. If you don’t have a baster, simply spoon the liquid over the chicken/mushrooms.
