Eating healthy on a tight budget could be difficult sometimes, therefore, I have created a nutritious yet ridiculously cheap Kacang Pool meal! For under $10, you are able to make 4 meals! This fibrous meal will sure to keep you full for a longer period of time. Kacang is derived from a malay word which means beans. Traditionally, minced beef and curry powder are added to the meal, however, omitting them doesn’t compromise the flavour. It cut the cost of making it as well as the calories.

Serves: 4                 Time:20 mins

Ingredients :

  •  1 can Foul Medames (wash and drain)
  • A pinch of salt & pepper
  • 4 fresh green chillies (sliced)
  • 1 medium red onion (diced)
  • 4 eggs (sunny side up)
  • 2 limes (halved)
  • 8 slices of Multigrain Country Loaf 

Preparation :

  1. Drained the fould medames and wash it
  2. Blend the foul medames till its texture is a little chunky
  3. Pour the blended foul medames into a non-stick pot and let it boil
  4. Add salt & pepper to taste
  5. Pour the mixture into 4 equal bowls and topped it up with sliced onions and chillies
  6. Serve each bowl with an egg and 2 slices of bread
