Tea Cakes and Honey Butter

These hot, yeasted Tea Cakes are perfectly matched to luscious honey Butter. Eating them makes me feel like a pioneer woman or something! This recipe uses a yeasted batter, but it only needs to rise for one hour. You can easily whip up these tea cakes and have them ready at teatime; just serve them instead of scones or biscuits with your favourite tea .

Ingredients
  • 1¼ cup milk
  • 1½ tsp dried yeast
  • ½ cup butter
  • 1 tsp salt
  • ½ cup brown sugar
  • ½ tsp cinnamon
  • 3 eggs
  • 3½ cups flour
  • ⅓ cupcinnamon sugar
  • ½ cup butter, softened
  • 2 Tbsp honey
Instructions
  1. In a small pot, heat milk to lukewarm. Remove ¼ cup of warm milk and place in a small bowl. Sprinkle yeast into bowl of warm milk and set aside for 5-10 minutes, until it blooms.
  2. Meanwhile, add butter to remaining milk in the pot. Heat until the butter is melted.
  3. In a large bowl, pour hot butter milk mixture over salt, ½ cup brown sugar, and ½ tsp cinnamon. Cool to lukewarm.
  4. Add the yeast and eggs to milk mixture, beating well.
  5. Gradually add flour and mix until the batter is smooth.
  6. Cover dough with a damp cloth and let rise in warm place for 1 hour.
  7. Grease a muffin tin. Fill each until ½ - ¾ full.
  8. Sprinkle 1 tsp of cinnamon sugar over each muffin.
  9. Bake 20-25 minutes. Serve warm with honey butter (recipe below).
Honey Butter
  1. Mix butter and honey. You can mess around with the sweetness to match your own preferences.
