Grandma's Chewy Oatmeal Cookies Recipe

Believe it or not, when me and my cousins were young, one of our favorite snacks at Grandma 's house was to eat her raw oats!  She would give us a small cup of oats and send us out of the kitchen so she could do her baking, canning, or meal preparations.  Another of our treats were to get on of hers or Great Aunt Jewel's (who lived just down the road from Grandma) dill pickles to chomp on as we ran and played outside.

Below is Grandma's recipe for wonderful and tasty Oatmeal cookies.  I will be posting her crispy low-calories cookies as well.

Chewy Oatmeal Cookies
(makes 2 & 1/2 dozen) 

Ingredients:

  3/4 cup margarine
  1/4 cup honey
  1 cup light brown sugar, tightly packed
  1 egg
  3 Tablespoons water
  1 teaspoon vanilla
  1 cup flour
  1/4 teaspoon baking soda
  3 cups rolled oats
  Optional: 1/2 cup raisins or chopped nuts

Steps:

  1. Preheat oven to 350 degrees.
  2. In large bowl beat together margarine, brown sugar, honey, egg, water and vanilla until smooth.
  3. Mix in flour and baking soda,
  4. Mix in oatmeal (and nuts or raisins if desired).
  5. Drop by rounded spoonfuls on greased cookie sheet.
  6. Bake at 350 degrees for 10 to 12 minutes,

Variation:

Your favorite flavor of baking chisp can also be substituted for the optional raisins or nuts too.
