Sweet and Sour Chicken Recipe

This Sweet and Sour Chicken Recipe was one of my favorite recipes growing up, and one that my kids (and husband) love too. It wasn’t a regular on the recipe rotation, my mom usually saved it for more special occasions like birthdays or an occasional Sunday dinner, but we all loved it.

It’s different than what you get from a Chinese restaurant when you order sweet and sour. The Chicken isn’t breaded and fried and the sauce isn’t sickening sweet and thick, it’s more of a glaze than a sauce. I think it is pretty much perfect, especially when paired with Ham Fried Rice.

Sweet and Sour Chicken
Ingredients
  • ¼ c brown sugar
  • 2 Tbs corn starch
  • ½ tps salt
  • ¼ c. vinegar
  • 1 TBS soy sauce
  • ¼ cup green onion, chopped
  • ½ c chopped celery
  • 1 can pineapple chunks (drained, save the juice)
  • ¾ c. green pepper chopped
  • 3 chicken breasts chunked
Instructions
  1. Brown chicken pieces in a skillet or wok.
  2. While chicken is browning: Whisk together brown sugar, corn starch, salt, vinegar, soy sauce and juice from pineapple. Set aside
  3. Add green onion, celery, green pepper to chicken. Cook until tender. Add the sauce and pineapple. Cook until thickened. Serve over rice.

 

If chicken isn’t your favorite you can substitute pork or meatballs for the chicken. Although chicken still remains my favorite.
