Breakfast is definitely my favorite meal of the day! A slice of toast with fruit, for example, is perfection. My day job takes a lot out of me mentally because 90% of it involves problem solving design issues on my client's website. So, making sure I eat a light meal keeps me awake and alert!
I remember when I used to skip breakfast and just eat lunch while working, by the time 2:00 rolled around, I crashed out! And, I always hated that feeling but I didn't make the connection that skipping breakfast was the cause. Not till I committed myself to eating something in the mornings, even a small portion, did I realize what a difference it would make. No more afternoon crashing and I actually can focus better too.
Today, for example, I was working on a website problem and if I had skipped breakfast, by the afternoon I would have had to stop. Instead, I kept plugging away and finished the project with energy to go. Plus, I discovered something else...I actually enjoy breakfast time. I don't just eat and run. I take time to sit down and enjoy my meal, pray, read some emails and not rush through it. I think that's just as bad as skipping meals. Our body can't properly digest food when we rush eating.
So, I thought I'd share with you some of my favs for a light breakfast dish:
- Toast with jam or butter spread including Texas toast
- Hash browns with bacon
- Ham steak and biscuit
- Grilled cheese (well this can be for breakfast right?)
- Tater tot casserole
- Breakfast croissant
- Cereal and milk
- Fresh fruit
- Cinnamon raisin bagel
- Sausage biscuit
I definitely love the pancakes, waffles, or reuben sammies with maple syrup, but they're way too heavy for me. I keep my meals light while working. Now, you might wonder why I didn't list eggs, well I can't eat them. That is to say I'm able to eat them when I use them as a binder like cooking meatballs or baking. Hubby is the egg eater in the family and he loves to make them with link sausages.
