Mini No Bake Wedding Cakes

Friends, I am SO excited to be back with you. And if you know anything about me, it’s probably no surprise that I brought Cake 😉 Not just any cake … Mini No Bake Wedding Cakes! Teeny tiny tiered cakes that are absolutely perfect for bridal showers, a rehearsal dinner, anniversary party or even wedding favors.

In case we haven’t met, I am Keri from Shaken Together. I am an operations manager, working mom to two teenage boys and wife of 17 years. I love to share no-fuss food and easy entertaining ideas, so if you like recipes with regular ingredients and no complicated techniques, then I am the girl for you!

Now, since wedding season is quickly approaching, I wanted to share a sweet little tiered no bake treat for any wedding celebration …

Mini No Bake Wedding Cakes

Here is a list of ingredients to make these mini cakes:

  • Frozen pound cake
  • One tub of purchased white/vanilla/cream cheese frosting
  • 3 round cookie cutters in varying sizes – mine were 2 1/4, 1 3/4 and 1 1/4 inch rounds and they are from an inexpensive set from a big box store
  • White nonpareils (sprinkles) and sparkling sugar

Gather the following kitchen items as well:

  • Baking sheet with sides
  • A cooling rack that fits inside the baking sheet
  • Sharp knife
  • Spoon

These cakes start with frozen pound cake. Using a large sharp knife, cut the frozen pound cake in about 1 inch slices lengthwise. Since pound cake is a little denser than regular cake, it holds its shape well and can easily be cut with a cookie cutter. Which is handy, since that is exactly how these cuties start.

One small frozen pound cake results in about four 3-tier mini wedding cakes. (This may vary depending on the size of the cookie cutters you use.)

P.S.A. – Save your pound cake scraps for mini trifles, top them with fruit or just to nibble while you work 🙂

Once your pound cake rounds are cut, use some frosting to act as ‘glue’ to hold the tiers together. This also helps even out the layers if they are a teeny bit uneven. You could also use jam or even Nutella between the layers – YUM!

Place a cooling rack in a baking sheet and place the mini cakes on top of the cooling rack. Then, microwave the remaining frosting at 20 second intervals until it is a pourable consistency. Spoon the frosting over the stacked mini cakes like this:

Make sure you continue to spoon frosting around the sides and over the layers to ensure that the entire mini cake is covered.

Allow the frosting to drip off and set up slightly. Then, sprinkle the No Bake Mini Wedding Cakes with white sprinkles and sparkling sugar.

These are just so pretty and decked out in their wedding finery. You could easily personalize these with sprinkles/sugar in the wedding colors or even edible flowers. Wouldn’t that be gorgeous?!
