RED Amaranth WITH TOOR DAL RECIPE


RED AMARANTH WITH TOOR DAL - Hello Friends, today I am going to share a simple and delicious recipe - RED AMARANTH DAL. This is a protein-rich and nutritious recipe made with toor dal and amaranth leaves.


Toor dal is known by different names as tuvar dal | yellow lentil | split pigeon pea, which is prepared almost every day in India in different ways.

Red Amaranth dal is prepared using toor dal, amaranth leaves with basic onion tomato masala. This can be served with plain steamed rice or with roti, paratha. 

When you want to cook something very simple, healthy, and also with minimum ingredients then I would definitely suggest this recipe as it is very easy, and the only time-consuming process is chopping the leaves, onion, and tomato. So let's get started.

Step 1: Wash and soak the lentils for a minimum of 30 mins.

Step 2: Meanwhile remove the leaves from the stalk rinse them well in water and chop it. (Don't  throw away the stalk as I am going to post a recipe with it .)

Step 3: Slice the onion, slit two green chilies, and keep them aside.

Step 4: Pressure cook the soaked lentils with roughly chopped tomato, turmeric powder, and sufficient water until soft and mushy.
 
Step 5: Heat oil in a pan, add mustard seed when it stops spluttering add urad dal along with curry leaves and asafoetida. Saute for a min. Add onion and fry until it turns translucent. 

Step 6: Add chopped amaranth and green chilli cook for few seconds.

Step 7: Add cooked dal, along with salt, and mix well. Adjust water according to the right consistency. Simmer for a couple of minutes. Remove from heat and serve it hot.

For kids serve it with white rice and a generous amount of ghee. It tastes heavenly and they are sure to enjoy it.

  • 1 tomato
  • 2 green chillies
  • 1./2 tsp. of turmeric powder
  • A pinch of asafoetida
  • A sprig of curry leaves>
  • Salt as required
  • Oil
Instructions:
  1. Wash and soak the lentils for a minimum of 30 mins.
