Deer Tacos / Venison Tacos

Sometimes I feel like a one trick pony I constantly find myself cooking Tacos or burritos quit frankly its my favorite type a food next to pizza and a good pasta dish ( kinda hard to shake the Ginzo outa me).

Deer Taco

1 lbs ground Deer / venison

5 tbl spoons olive oil

Pink Himalayan (salt to taste)

black pepper pinch

1/4 teaspoon Cayenne  pepper ( or less if you like less spicy)

1/2 teaspoon smoked paprika

1 teaspoon of Powered Chicken Bouillon

1/2 cup fine chopped boars head white american cheese slices ( don’t use Kraft slices for God sake)

1 cup cut heirloom cherry tomatoes cut into half or quarters

2 table spoons of Guldens spicy brown mustard

6-8 flour tortillas 8″

1 – 2 whole sliced avocados

Fage 0% fat greek yogurt

Bunch of cilantro

2 limes

COOKING INSTRUCTIONS FOR DEER TACOS:

  1. add 2 table spoons of oil into hot pan, salt the pan liberally and add a couple pinches of salt
  2. in hot pan and oil add in your tomatoes cook them down until they get a nice char and broken down quit a bit remove the tomatoes from heat place in a dish and set aside
  3. in same pan add the renaming oil then add your ground venison / deer meat , systematically begin breaking up the meat and distributing evenly in the pan to ensure you coat the whole bottom with meat almost so it makes a giant “meat pancake” let brown on one side . If the pan is not very hot or you have low BTU I would consider doing half the meat at a time otherwise the meat will boil instead of sear and brown. “boiling meat” will give it the gamey taste.
  4. while meat is browning in a mug or glass measuring cup heat up 1/3 cup of water ( like hot enough for tea) add in the chicken bouillon mix it well until dissolved then all your spices and the mustard and mix to even consistency
  5. Once the deer meat is completely browned and has some crispy edges fold in your tomatoes and add your liquid spice mixture
  6. As soon as the liquid starts to thicken a bit fold in your cheese keep folding until evenly distributed and most of the liquid become thick like gravy then remove from heat

7. take your tortillas and cook them over either your gas burner directly or in a pan I prefer the gas burner gets little char marks that add to the flavor

8. put 2 tortillas on a plate and spoon of yogurt and spread evenly then place some of your of your deer taco Meat mixture then add two thin slices of avocado, some chopped cilantro a squeeze of lime then serve…. you can add salsa if you desire but I find they are good just like this. sometimes i like additional shredded cheese as well
