Chinese New Year is here and it’s time to make some amazing Pork fried Rice. This was so good and so easy - and was great as left overs. Part of the fun is that Uncle Ben's makes "boil in the bag" brown rice. Done in 10 minutes.
I always keep a few boxes of this in my pantry since you never know when you'll need it. My husband is a HUGE rice fan, so I'm slowly moving him over to brown instead white rice.
Pork Fried Rice
1/2 tsp minced garlic
1 tbsp oil
2c cooked brown rice
1 med. white onion, sliced

1 1/2c cubed pork
1c thin sliced carrot rings
1c (or more) edamame (fresh or frozen)
2 eggs, scrambled
1 scallion, sliced
3 tbsp soy sauce (I use low sodium)

- Sautee pork in oil with salt & pepper
- When pork is done remove from pan and set aside
- Scramble 2 eggs – set aside
- Sautee onion in oil until soft, add garlic and continue to cook
- Reduce heat to low and add rice, pork, edamame, scrambled egg, scallion, and soy sauce
- Toss and serve hot
