After you soak bulgur in hot water for about 40 minutes, it absorbs the water and becomes light and fluffy. It has a similar look to couscous and quinoa, but it is not the same by any means. Most people want to boil bulgur to cook it the same way they cook rice or quinoa, but the authentic way to prepare it is to soak it in hot water. This method yields the fluffiest bulgur for your tabbouleh.

Next to bulgur, parsley is the prominent ingredient in tabbouleh, which is why the salad is so green. It also contains green onion and fresh mint, which contributes to the green color and fresh flavor.
