Mirapakaya Kodi Vepudu | How to make Andhra Style Chicken Fry

This is yet another dish from Amma's Kitchen. Since we try to make new dishes for Sunday lunch, our quest to find new recipes is always there. Amma checked her collection and

said she found another Kodi Vepudu from Andhra cuisine. We already have quite a few variations in making Chicken Fry or Kodi Vepudu as we say Telugu.

We have got into the habit of making Biryanis for Sunday Lunch and we either make Chicken Korma or some dry dish. Depending on what type of biryani is made, we take a call. This is mostly done when we make Andhra Kodi Biryani or Nawabi Biryani.

This Mirapakaya Kodi Vepudu as you can see is very spicy as we have used both dry red chili and green chili. Since my family loves spicy food, they enjoyed this a lot. Apart from biryanis, you can also serve this dry roast with Pappu Charu as well.

Step By Step Pictures to make Andhra Chicken Fry

For the Chicken Marinade

Wash and cut the chicken into bite size pieces.
Dry roast all the whole spices, allow to cool down and grind to a powder.
Transfer the chicken to a bowl, add the spice powder along with salt and mix well.
Let it marinate for at least 30 mins.

For the Fry

Heat a kadai with oil, add the curry leaves, finely chopped green chilies. Saute well.
Next add the onions and mix well. Now add the whole spices along with ginger garlic paste.
Cook in low flame for 5 mins.
Add chopped tomatoes and combine.
When the tomatoes turn mushy, add the chicken marinate and cook on high flame.
Continue cooking till the whole mixture comes together, takes about 10 mins.

When the chicken is almost dry, add the coconut, green chilies and ginger.
Cook for another 5 mins, garnish with coriander leaves and serve as side dish for rice.

Ingredients

For the Chicken Marinade

  • 1 tbsp Coriander Seeds
  • 1 tsp Cumin Seeds
  • 1 tsp Peppercorns
  • 5 Dry Red Chili
  • Salt to taste

For the Chicken saute

  • 2 sprig Curry Leaves
  • 2 Green Chilies finely chopped
  • 1 cup Onions finely chopped
  • 3 Cloves
  • 1 Cardamom
  • 1 inch Cinnamon
  • 1 tsp Ginger Garlic Paste
  • 1/2 cup Tomato finely chopped
  • 2 tsp Coconut grated
  • 1 inch Ginger julienne
  • 1 Green Chili slit
  • Coriander leaves

Instructions
