White Chicken Chili recipe perfect for SOUPER BOWL Party!
Whether it is Super Bowl Sunday or the cold month of January, soup is high on the menu list. Nothing is more comforting than a fire in the fireplace (I love my gas logs with my remote) and warm, hearty soup simmering on the stove. This White Chicken Chili recipe has a fantastic flavor and is only about 10 ingredients. Soups are great as you can make them ahead of time, they grow with the group, and the longer they sit, the better they get!
Freeze soups for another quick meal on a cold, miserable day.
- Cool and then pour into airtight containers, leaving room for expansion.
- Zip lock freezer bags are a great storage method as they stack easily in the freezer.
- Take out the night before using, thaw in the refrigerator, and reheat.
Super Bowl Party
The Super Bowl (February 1) game is one of the most anticipated and widely viewed sporting events of the year. People bet on everything from who wins the coin toss to who ultimately wins the game, but the only sure bet is everyone is always ready to eat. The key to enjoying your party is to prepare recipes like my white Chicken Chili Recipe that can be made ahead of time and don’t require much attention to serve. So, have a “Souper Bowl Party!!” Prepare two or more varieties of soups. (Many soups can be made ahead and frozen; they even are better). Just place the pots of soup on a low heat on your stove and surround with mugs. Have a few appetizers and desserts scattered around for food game grazing. A large container iced down with assorted cold drinks is perfect for added self-serve convenience. With these entertaining suggestions, your time in the kitchen will be minimal and your place in front of the television (for the game or commercials) will be safe.

Wonderful White Chili (diabetic friendly) from Eating Well to Fight Arthritis
Love this recipe for white Chicken Chili that starts with ground chicken (ground turkey may be used) A satisfying warm bowl of chili with minimal preparation and maximum taste—a definite go-to chili recipe.
Makes 8 (1-cup) servings
1 pound ground chicken
1 onion, chopped
1 teaspoon minced garlic
1 (16-ounce) can white navy beans, rinsed and drained
2 (14-1/2-ounce) can low sodium fat-free chicken broth
1 (4-ounce) can diced green chilies
2 cups frozen corn
1 teaspoon ground cumin
2 teaspoons chili powder
1. In large nonstick pot, cook chicken, onion, and garlic until chicken is done. Add remaining ingredients and bring to boil. Reduce heat and cook, covered 15 minutes, until heated through.
