How to Make Coconut Cake in a Crock Pot

Can You Believe It? Dessert Made in a Crock Pot!

Ok y’all, the Crock Pot Convenience chapter, in Holly Clegg’s Kitchen 101: Secrets to Cooking Confidence is because of you! After asking Facebook, many responded by saying how much you wanted slow cooker recipes. I just had to see what all the fuss is about – and boy do I get it now! As a coconut fan, I can’t get enough of this moist, delectable Crock Pot Coconut Cake.

Ever want to eat a cake hot from the oven? Now you can have your wish! Thought it would be fun to try a cake in my crock pot and this moist coconut cake rocks!
    Servings16 servings
    Ingredients
    • 1 box yellow cake mix18.25-ounce
    • 1/4cup canola oil
    • 2 eggs
    • 2 egg whites
    • 1teaspoon coconut extract
    • 1 1/3cups lite coconut milkdivided
    • 2tablespoons confectioners’ sugar
    • 1/4cup flaked coconut
    Instructions
    1. In 3 1/2-6-quart slow cooker, insert plastic liner if desired, or coat with nonstick cooking spray.
    2. In bowl, combine cake mix, oil, eggs, egg whites, coconut extract and 1 cup coconut milk, mixing well. Transfer to slow cooker, cook on HIGH about 1 hour 15 minutes (if using 4 quart crock pot, will take about 2 hours).
    3. When cake is done, Whisk together remaining 1/3 cup coconut milk with confectioners’ sugar, mixing well. Poke holes in hot cake with toothpick; gradually pour coconut milk over top of cake. Sprinkle with coconut and serve.
