How To Cook An Easy Jambalaya Crock Pot Recipe!

My kids constantly request my Cajun Chicken Sausage Jambalaya recipe.  I love this jambalaya crock pot recipe! Who doesn’t like an easy slow cooker jambalaya recipe? Make this favorite healthy Cajun recipe for a favorite jambalaya crock pot recipe. Just prep the ingredients and plug in the cooker. Dinner cooks itself.  This tastes like the traditional Chicken Sausage Jambalaya recipe but the difference is this chicken jambalaya cooks itself. So good!

Makes 8 (1 1/2 cup) servings

1 pound boneless, skinless chicken breast, cut into chunks
1/2 pound reduced-fat sausage, sliced
1 cup chopped celery
1 large onion, chopped
1 green pepper, seeded and chopped
1 teaspoon minced garlic
1/2 teaspoon dried thyme leaves
1 (14-ounce) can diced tomatoes
2 cups fat-free chicken broth
2 tablespoons tomato paste
Salt and pepper to taste
2 cups instant brown rice
1/2 chopped green onions

1. In 3 1/2-6-quart slow cooker, insert plastic liner if desired and place chicken and sausage in pot. Add remaining ingredients except brown rice and green onions.
2. Cook on LOW 2 1/2 hours. Turn to HIGH and stir in rice and green onions. Cook, covered 30 minutes more or until the rice is tender and liquid absorbed.

Use leftover cooked chicken to create this Cajun Chicken Sausage recipe. It is a fun, quick recipe with only  five ingredients.  Sometimes, you need a speedy version for a fast southern favorite dinner. Makes 2 servings

4 ounces reduced-fat smoked sausage, diced
1/2 pound cooked boneless, skinless chicken breasts, cut in strips or chunks
1 1/4 cups salsa
1/2 teaspoon dried thyme leaves
1/2 cup chopped green onions

1. In large nonstick skillet, cook sausage over medium heat until done. Drain excess grease. Add chicken, salsa, and thyme. Bring to a boil and reduce heat.  Add green onions, cooking 5 minutes longer. Serve over rice.
