Healthy Rotisserie Chicken Lasagna Perfect Easy College Recipes with Rotisserie Chicken!
Everyone loved my Rotisserie chicken lasagna because it was so delicious and an easy chicken recipe! What could be more effortless and satisfying than cooking college recipes using Rotisserie chicken? With deadlines and finals quickly approaching, I think I can speak for every college student when I say the best way to settle that testing anxiety is through comfort food. But, one fault in this plan is that a good home cooked meal can be very hard to come by when your mother lives several miles away. Holly Clegg’s Kitchen 101 can turn any hungry college kid into a confident cook who can whip up their mama’s cooking in no time. I made this easy chicken lasagna, which is also a healthy chicken lasagna, to keep me full and happy for the rest of the week! This is the perfect college chicken recipe for sure!

Kitchen 101: Secrets to Cooking Confidence contains several delicious yet simple recipes which make it the best college cookbook. My favorite aspect of this cookbook is that all of the recipes are “Trim and Terrific.” You can indulge in these satisfying meals without worrying about gaining the dreaded Freshmen 15 (or in my case the Sophomore 30).
Of course, I love the fact that this easy first cookbook includes a chapter just for Rotisserie Chicken Recipes! Wow! I got so excited because there’s such a variety of Rotisserie chicken recipes which is such a time saver. However, the Rotisserie chicken lasagna had my name on it. What caught my eye is that it is also a healthy chicken lasagna recipe, as are the rest of the recipes in the cookbook. I know I will have fun trying more of these recipes because cooking healthy is so important to me. In addition, Holly makes cooking incredibly easy too!
Recipes with Rotisserie Chicken Are Time Saver College Recipes!
One of the standout college recipes I have made so far was this easy chicken lasagna recipe. By using a rotisserie chicken, no-boil pasta, and jars of marinara sauce this recipe became effortless and a perfect recipe for a busy college lifestyle. I also had fun with this healthy chicken lasagna recipe by alternating between two different flavored marinara sauces to add a delicious flavor combo. On top of that, I used whole-wheat pasta and added spinach leaves for an extra source of fiber. It was fabulous!

Rotisserie Chicken Lasagna Perfect Healthy Easy College Recipes with Rotisserie Chicken
To say this Easy Chicken Lasagna was satisfying would be an understatement. It gave me the nourishment I needed to study and finish the night strong, the comfort of a delicious home cooked meal, and the confidence of knowing I did it all by myself. I love recipes with rotisserie chicken.
Easy Chicken Lasagna recipe from KITCHEN 101 cookbook!
This scrumptious easy chicken lasagna makes a simple-to-prepare dinner because it uses no-boil noodles and rotisserie chicken. Also, try different flavored marinara sauces to change the flavor. Adjust the recipe with your favorite ingredient. Cooking is creative. Have fun adapting this recipe by adding spinach to the lasagna and use fresh or frozen spinach.
Makes 8-10 servings
2 (25-ounce) jars marinara sauce (heart healthy marinara sauce)
1 (8-ounce) package no-boil lasagna noodles, divided
1 (15-ounce) container low-fat ricotta cheese
2 1/4 cups shredded part-skim mozzarella cheese, divided
1 rotisserie chicken, skin removed, cut into pieces (about 3 cups)
1. Preheat oven 375˚F. Coat 13x9x2-inch pan with nonstick cooking spray.
2. Spread about 1 cup marinara sauce on bottom of pan. Top with one-third noodles, all the ricotta cheese, 1 cup mozzarella, half the chicken and 1 cup sauce. Repeat layering. Start with one-third noodles, remaining chicken, and 1 cup mozzarella. Top with remaining noodles and sauce.
3. Bake, covered with foil for 1 hour. Uncover. Top with remaining 1/4 cup cheese and continue to cook 5 minutes or until cheese is melted.

Terrific Tip: Try adding sliced mushrooms, baby spinach, and black olives to this basic recipe. Here’s an American Heart Association certified marinara sauce. I like Prego Heart Smart Marinara and it’s an affordable sauce too!
