Egg Plant Swallow Recipe

Today’s recipe, the Egg Plant Swallow,  is an answer to the cry of our sisters from the western part of Nigeria living the Keto lifestyle. 

Amala is the swallow that goes very well with the ewedu soup. But, amala being made from yam and plantain flour is high in carbs and is sure to take you out of ketosis.

This Egg Plant swallow is the Keto Substitute for amala in every sense of the word substitute. Right from the color to the consistency and even the way it feels on the fingers not to mention the smoothness down the throat with the “draw”soup.

I’m already salivating! 

Let’s get to it.

Prep Time: 20 minutes

Cook Time: 10 minutes

Serves: 3


  • Egg plant or aubergine 1kg.
  • CMC (carboxy methyl cellulose) powder.

You will also need:

  • Pan
  • Colander
  • Pot
  • Blender
  • Chopping board
  • Knife
  • Wooden spatula

Nutritional Information:

Each portion contains 3g of carbs which is perfect for a Keto meal.


  1. Wash the Egg Plant very well.Egg Plant
  2. Dice it up.Diced Egg Plant
  3. Put in a colander.Egg plant in colander
  4. Place the pot on fire, add about 3 cups of water and place the colander in the pot to use as a steamer. If you have a steamer please use that.Steam egg plant
  5. Allow the egg plant to get soft.Soft egg plant
  6. Empty into a blender, then blend without adding water into a smooth consistency. Egg plant swallow
  7. It is now time to make the Amala. Pour the blended egg plant into a pan and add 4 Tbsp of CMC powder. Egg plant swallow
  8. Stir and turn until it comes together smoothly. The same consistency as amala. Egg plant swallow
  9. Wrap up your swallow. Egg plant swallow
  10. Serve with a Keto compliant soup. Egg plant swallow
