Is it complicated to make a gluten free bread?

However, most of these recipes are made with expensive or difficult to find ingredients , have good texture or require complicated processing.

Buckwheat has no gluten

Buckwheat is native to Asia, but today it is grown in different countries like Spain.

It should not confuse its name, since it is not a wheat nor a cereal. It is also known as buckwheat and is a seed, with all the advantages that that implies at nutritional level.

In this way we can eat a pan with less carbohydrates and with greater protein and fiber, since it contains more than 10% of protein of easy assimilation, as well as the 8 essential amino acids.

The name buckwheat gives us the clue that we can use it in the same way as normal wheat. In fact, in France it is used to make salty crepes which gives them a strong and characteristic flavor.

Rice flour as an alternative

Rice flour is very common among celiacs, as it is gluten-free, has a very neutral taste and can be used just like wheat flour.

However, if we use it without combining with other flours, the texture may be too compact.

We recommend using brown rice flour , since most are refined and lacking cereal fiber, the recipes will be more indigestible and may cause constipation.

Gluten-free bread recipe

Ingredients

  • 2 eggs
  • 2 cups of water (500 ml)
  • ½ cup extra virgin olive oil (100 g)
  • 2 tablespoons brown sugar (20 g)
  • 1 tablespoon sea salt (10 g)
  • 2 cups buckwheat flour (220 g)
  • 1 cup rice flour (120 g)
  • 1 sachet of dry yeast powder (12 g)
  • Seeds of sunflower, pumpkin, sesame, flax or chia (optional, to decorate)

Utensils

To make this bread we will need a blender.

What should you do?

  • First, we will beat the two eggs for at least one minute. This step is important so that the bread is fluffy.
  • Next, add the liquid ingredients, water and oiland beat again.

Note : If the ambient temperature is cold, the water should be warm.

  • Later we will incorporate the sugar and the salt, we will beat and we will reserve.
  • We will mix the two flours dry and incorporate them gradually to the blender, to mix everything again well.
  • Finally we add the yeast and we will beat again. The result will be a fairly liquid mass.
  • Preheat the oven to 200 ºC and for 15 minutes, put the bread dough in the refrigerator . The abrupt change of temperature will activate the yeast process and we will obtain a more spongy bread.
  • After that time, we will put the bread in the mold and if we wish, we will sprinkle some seeds on top.
  • We will introduce it to the oven and cook it for 40 minutes at 180ºC.
  • After that time we will verify that the interior of the bread is well done with the help of a knife. If it comes out clean, it will be ready.

Ideas

If we like this gluten free bread we can look for different flavor touches with this recipe by changing some of the ingredients:

  • Spices such as ginger, cinnamon, cardamom or cayenne pepper.
  • Aromatic herbs such as oregano, thyme, rosemary or basil.
  • Garlic powder or ground.
  • Drink vegetable (coconut, almond, oats) instead of water.
  • Maize or chickpea flour.
  • Sweet version of bread, with cocoa, spices, honey, dried fruit, etc.
