- Prep time: 25 minutes
- Cook time: 25 minutes
- Total time: 50 minutes
- Yields: 12 muffins
Equipment Needed
- 2x medium glass mixing bowls
- small bowl
- measuring cups
- measuring spoons
- silicone spatula
- hand mixer OR whisk
- silicone muffin pan
Ingredients
- 1 3/4 cups flour
- 1 tsp baking powder
- 3/4 tsp salt
- 1 egg
- 1/2 cup sugar
- 1/2 cup milk
- 1/3 cup melted butter
- 2 whole oranges
- 1 cup semi-sweet chocolate chips
Tips
- Do not open the oven door or you run the risk of ending up with flattened muffins.
- Do not beat the dough like a cake as it will prevent the muffins from rising and make them heavy.
- Never fill the muffin molds more than three-quarters full.
- Place the muffins in the center of the oven.
- Using vegetable oil results in lighter muffins because it prevents gluten formation in the flour. On the other hand, butter adds more fluffiness to the dough.
- Silicone molds give better results than paper molds, which burn easily.
Instructions
Preheat the oven to 380 F.
Sift the flour, baking powder and salt into a bowl and set aside.
Cut one orange in half, then press the juice out of it and set aside.
Peel the second orange and slice it into chunks.
Place the egg, sugar, milk, oranges pieces, juice, and butter into a medium glass mixing bowl.
Use a hand mixer or whisk to mix until all of the ingredients are well combined.
Pour the liquid mixture over the dry ingredients, mixing as little as possible until you obtain a moist batter.
Use a silicone spatula to gently fold in the chocolate chips.
Spoon the batter into silicone or paper-lined muffin pans.
Bake at 380°F for about 25 minutes.
Once the muffins have finished baking, remove from the oven and place on a cooling rack until ready to serve. These muffins can be served when they are warm or when they have completely cooled.
