Equipment Needed

  • 2 baking sheets
  • 2 silicone baking mats
  • stand mixer OR hand mixer and large glass mixing bowl
  • large glass mixing bowl
  • small glass mixing bowl
  • spatula
  • whisk
  • measuring cups
  • measuring spoons
  • #40 cookie scoop
  • 2 cooling racks

Ingredients

Cookie Ingredients 

  • 2 cups all-purpose flour 
  • ¾ tsp baking soda 
  • ½ tsp kosher salt 
  • ¾ cup light brown sugar (packed) 
  • ½ cup white sugar 
  • ¾ cup unsalted sweet cream butter 
  • 1 large egg 
  • 1 large egg yolk 
  • 2 tsp pure vanilla extract 
  • 1 cup dried cranberries 
  • ½ cup pecans (chopped) 
  • ½ cup walnuts (chopped) 
  • 1 cup white chocolate chips 

Garnish Ingredients

  • extra chopped pecans and walnuts. 
  • extra white chocolate chips

Instructions

Preheat the oven to 325 degrees F. 

Line two baking sheets with silicone baking mats. 

Place the flour, baking soda, and salt together into a small bowl and whisk together, then set aside. 

Place the brown sugar, sugar, and cooled melted butter into a stand mixer or large glass mixing bowl. 

Mix the three ingredients together for a minute (use the paddle attachment if using a stand mixer).

Add the egg, egg yolk, and vanilla to the bowl and continue beating for one more minute.

Use a rubber spatula to scrape down the sides of the bowl.

Reduce the speed of the mixer to low and continue to mix while adding in the flour mixture.

Beat until just combined. 

Add in the cranberries, pecans, and white chocolate chips using a spatula.

Make two tablespoon dough balls using a #40 cookie scoop. 

Put each cookie dough ball onto the prepared baking sheet, spacing them two inches apart.

Bake for 15 minutes, rotating the baking pan about halfway through the baking time.

Remove the baking pan from the oven. 

Garnish the cookies with extra walnuts, pecans, and white chocolate chips.

Leave the cookies on the baking pan and let them slightly cool for 10 minutes.

Transfer the cookies to a cooling rack to allow them to cool for an additional 5 minutes.
