Ingredients
- 5 tbsp unsalted sweet cream butter, softened
- 1/2 tsp kosher salt
- 2 large eggs
- 1 cup light corn syrup
- 2 1/2 cups chopped pecan
- 3/4 cup shredded sweetened coconut
- 1 cup semi sweet chocolate chips, divided
- 1x 9-inch ready-to-bake pie crust
Instructions
Preheat the oven to 350 degrees F.
Place the premade pie onto a cookie sheet.
Place the eggs into a medium bowl and whisk until combined.
Place the butter, salt and corn syrup into a medium saucepan and whisk until the butter is melted and the mixture is combined and smooth.
Remove the saucepan from the stove and allow it to cool for 5 minutes.
Gradually pour the corn syrup mixture into the eggs, consistently stirring until combined.
Fold in ½ cup chocolate chips, the chopped pecans and the coconut until combined.
Pour the other ½ cup of chocolate chips into the pie shell and spread evenly.
Pour the filling over the chocolate chips.
Place the pie into the oven and bake for 35-45 minutes.
Allow the pie to cool completely before serving.
Serve the pie with fresh whipped cream and mini chocolate chips.
