Here’s how to make it.

Equipment Needed

  • stock pot
  • strainer
  • large bowl
  • measuring cups
  • measuring spoons
  • cutting board
  • knife

Ingredients 

  • turkey carcass 
  • leftover turkey meat
  • 1x 15 oz can corn
  • 1x 15 oz can potatoes 
  • 1x 15 oz can carrots 
  • 8 oz egg noodles 
  • 1 tablespoon salt 
  • 1 teaspoon pepper 
  • 3-4 quarts water 

Instructions

Place the turkey carcass into a large pot, along with the turkey neck, giblets, any skin, & leftover turkey drippings.

Add approximately 3-4 quarts of water to the pot, making sure there is enough to submerge the carcass.

Add a tablespoon of salt and a teaspoon of pepper to the pot.

Bring the pot to a boil over high heat. 

Once the water is boiling, turn the heat down to a low simmer.

Let the soup simmer for about 5 hours, checking on it occasionally. If the water is boiling off too quickly and the bones start to stick out of the water, add a little more water to cover back it up and bring the pot back to a simmer.

Once the soup has finished cooking, pour the stock through a strainer into a large bowl in order to catch any bones.

Pour the boneless stock back into the large pot. 

Add the leftover turkey pieces, potatoes, corn and carrots to the pot.

Bring the contents of the pot to a boil and then simmer for 45 minutes.

Add the egg noodles to the pot and bring the pot up to medium heat.

Once the noodles have softened you’re ready to serve.
