Layered Caramel Chocolate Chip Blondies

These Layered Caramel Chocolate Chip Blondies are decadently delicious!

Here’s how to make them.

This recipe uses two 9×9 pans. It yields approximately 16 bars (approximately 8 per pan), depending on how large you cut them.

Equipment Needed

  • 2x 9×9 baking dishes
  • 2x large glass mixing bowls
  • small glass mixing bowl
  • measuring cups
  • measuring spoons
  • cooling racks
  • parchment paper

Ingredients

  • 1 ½ cups unsalted sweet cream butter, softened 
  • 2 ½ cups light brown sugar 
  • 6 large eggs
  • 1 tbsp pure vanilla extract 
  • 4 cups flour 
  • 4 tsp baking powder 
  • 1 tsp kosher salt 
  • 4 cups white chocolate chips + 1 ½ cups for middle of bars
  • 1x 8oz jar salted caramel sauce  
  • nonstick cooking spray

Instructions

Preheat the oven to 350 degrees f.

Line two 9×9 baking dishes with parchment paper and spray pans with nonstick baking spray. 

Place the flour, baking powder, and salt into a large bowl and whisk together.

Place the butter and brown sugar into a separate large bowl and beat together until combined and light and fluffy 

Beat in the eggs, one at a time until combined.

Beat in the vanilla until combined.

Gradually beat in the dry ingredients until the two mixtures are combined and a dough forms.

Fold in the 4 cups of white chocolate chips.

Divide the dough between the two 9×9 pans and press it into the pans.

Bake in the oven for 25 – 28 minutes or until light golden brown. 

Allow the blondies to cool completely. 

Remove the blondies from the pans and cut into bars. 

Place 1 cup of the white chocolate chips with ½ C of salted caramel sauce into a small bowl and mix until combined. 

Pair each of the bars to their matching size mate.

Place the bottom bar onto a wire rack. 

Scoop about 2 tbsp of the caramel coated white chocolate chips onto the top of the bottom bar. 

Scoop about 1 tbsp of the salted caramel sauce onto the white chocolate layer. 

Carefully place the top bar on top of the bottom bar.

Melt the remaining 1/2 cup of white chocolate chips in the microwave on 30 seconds until melted and smooth.

Using a spoon, drizzle the melted chocolate over the stacked blondies.

Allow the chocolate to harden before serving.

Serve and enjoy!
