Pressure Cooker Gluten-free Mac And Cheese

Mac and cheese. I don’t know of many kids that don’t love it. My boys could probably just about live on it. With my youngest being gluten-free, we’ve tried a number of boxed mac and cheese products. Some of them had an appealing taste, but at the rate my son could eat them they just weren’t the most economical thing to buy. So I started making homemade gluten-free mac and cheese.

Pressure Cooker Gluten-free Mac and Cheese is probably my favorite gluten-free side to make, because it’s simple and he just loves it. This creamy gluten-free side pairs well with so many things including beef, poultry, pork and fish. And perhaps best of all, this recipe comes together quickly, taking only about 15 minutes to make. Here’s how I make it.

Equipment Needed

  • electric pressure cooker (I used a 6 qt Zavor LUX LCD)
  • measuring cup
  • silicone cooking spoon

Ingredients

  • 1x 12 oz box gluten-free elbows (I used Ronzoni)
  • 8 oz shredded cheese
  • 1 1/3 cups heavy cream
  • 3 tbsp butter
  • 3 cups water (You can substitute broth for the water if you like.)

Instructions

Plug in the electric pressure cooker.

Coat the bottom of the pot with a thin layer of nonstick cooking spray.

Place the dry pasta into the pot.

Pour the water on top of the pasta, taking care to be sure that all of the pasta is covered with water.

Place the lid onto the pot and close to seal.

Set the pressure cooker to cook on manual high pressure for 3 minutes.

Once the cooking time has finished, do a quick pressure release.

Remove the lid from the pot.

Give the pasta a quick stir.

Add the butter to the pot and give a few stirs until most of the butter has melted.

Add in the cheese a bit at a time, stirring as you go.

Once all of the cheese is in the pot, pour the heavy cream into the pot.

Stir well to combine.

Serve immediately with black pepper to taste.

Tips

This dish can be made ahead. When reheating you may want top ad a splash of liquid so it doesn’t seem too dry.

You can even add in leftover meats and or vegetables, should you wish to turn this gluten-free mac and cheese side into a quick meal. You’ll want to watch the consistency if you add things, and use a splash more of liquid if it’s getting too thick.
