Pernilla shared her recipe for this hearty butternut squash, sausage, and gnocchi Skillet.
- 1 1/2 lb. Sausage Bulk
- 3 Cups Butternut Squash
- 3 Cups Chicken Broth
- 1 lb. Gnocchi
- 1/4 Cup Parmesan Cheese
- Salt and Pepper
- Olive Oil
- 4 Garlic Cloves
- 1 Cup White Wine (optional)
Pre-heat oven to 475 degrees. Finely chop 4 garlic cloves.
Heat oil in a large skillet over medium-high heat. Add sausage, cook breaking up, 8 minutes. To skillet add squash, garlic, 1 cup of wine if using, 2 cups broth (3 cups if not using wine), salt, and pepper. Bring to a boil.
Transfer skillet to the oven, roast until squash is tender, about 12 minutes. Cook gnocchi according to packet.
Drain gnocchi and stir into skillet. Top with parmesan and serve.
