Do you feel that? That’s your luck kicking in. Why, you wonder? Because you landed on our blog today and now have the golden (or should we say rainbow?) ticket to deliciously Healthy green pancakes! Yep, it’s St. Patrick’s Day and we are all about celebrating it. Sure, there are green bagels you could eat for breakfast, but that’s lame! Step up your game and whip these ah-mazing Pancakes up…
What You’ll Need:
1 2/3 cup whole grain oat flour or almond flour
1 medium banana
1 cup spinach
1 cup sweetened vanilla almond milk
Add all ingredients into a blender. Mix until an even batter consistency. Add in 1/3 more flour to the mix if too watery.
Heat your non-stick pan or griddle on med-low.
Add batter to the stove, heat, flip, heat…Enjoy!
There you have it, delicious and healthy pancakes. What we love the most is the amount of spinach and bananas that are involved. Both terrific sources of nutrients from iron to potassium. So start your day off the lucky way…cringe at our corniness, please.
