When it starts getting cold outside, one of my favorite things to do is start the day with a big bowl of hot oatmeal. Something about a fresh bowl of oatmeal in the morning just makes me content and ready to take on the day. No matter how cold the wind is. It also leaves me full for several hours without feeling stuffed and is so incredibly easy to completely change up the flavors for, which I have most definitely been doing, without having go out and buy super specific ingredients. Since it is fall, I decided I had to share with all of you a few of the mixtures I have come up with so far so you can enjoy these amazing fall flavors for your breakfasts also.
Caramel Apple Oats
Few flavors hit home for me the way that caramel apples do. I think it is because I have such fond memories of going down to the Apple orchard and buying a caramel apple as soon as the leaves began to fall every single year. Although I am now vegan, it doesn’t mean that I have to miss out on anything, and can still enjoy my favorite sweet treat for breakfast without all the added artificial ingredients. All you need to make this delicious recipe:
– 1/2 cup Oats
– 1 cup non-dairy milk
– 4-5 Dates, pitted + 1
– Pinch of Salt
– 1 Granny Smith Apple, diced
- Combine non-dairy milk, dates and salt in a food processor and run until the mixture is smooth to make the ‘caramel’ flavor. This will be very liquidy.
- Place oats into a microwavable safe bowl and add in the ‘caramel’ mixture and apples. Mix together. Cook oats as directed. Top with one chopped up date and remaining apple and enjoy!
And you have yourself and absolutely delicious and sweet breakfast that you won’t believe isn’t a dessert. I do use granny smith apples because I love the contrast of tart and sweet, but if you don’t feel the same you can always switch the apples up to suite your taste. My one note for you is to make sure the dates are extremely soft because they are much sweeter and blend more smoothly than if they are firm. However, if they are firm, allow dates to soak in hot water for 15-20 minutes and they will soften right up.
Pumpkin Spice Oats
The next up should be no surprise to all of you if you have been following my October food posts so far. I promise Pumpkin Spice will be gone soon enough and I will be back to my usual variety of recipes. But before that happens, you all have to try this recipe because instead of using my usual combo of spices, I use pumpkin puree and almond milk to give this oatmeal its flavor. And not just any almond milk, but Trader Joe’s Pumpkin Spice Almond Milk. I said I wasn’t using my spices. Not only does it taste amazing but it helps give this oatmeal its rich orange color. All you need to make this recipe is:
– 1/2 Oats
– 1 cup Pumpkin Spice Almond Milk (or any other non-dairy milk with 1 tablespoon of pumpkin spice added)
– 3 tablespoons Pumpkin Puree
– Brown Sugar, to taste
– Pecans, chopped
- Combine together oats, non-dairy milk, and pumpkin puree, mix well, and cook oats as directed.
- Sprinkle brown sugar, cinnamon, and pecans over the top and enjoy.
After making this recipe, you can pop it in the oven at 375 degrees Fahrenheit for a few minutes to give the top a slight crisp to it. It is so good and so simple to make that you will reach my levels of pumpkin spice obsession soon enough.
Maple Apple Oats
And finally, an all time classic combo, maple syrup, apples, and oats. For some reason, maple syrup is one of those scents that is so comforting and soothing that it can’t help but make me super happy every time I smell it. What about all of you? This recipe is very basic but it’s often forgotten even though it is so delicious. All you need for this recipe is:
– 1/2 cup Oats
– 1 tablespoon Chia Seeds
– 1 cup non-dairy milk
– 1 teaspoon Vanilla
– 1-2 tablespoons Maple Syrup + Topping
– Cinnamon, to taste
– 1 Gala Apple, diced
– Walnuts, chopped
- Combine together all ingredients except granola, mix well, and cook oats as directed.
- Top with granola, walnuts, and more maple syrup, and enjoy.
One weird combo that I realized is absolutely delicious with this recipe is when I add cold applesauce on top. It is such an odd thing, but having a scoop of chilled applesauce with warm apple oatmeal is just amazing and needs to be tried by every single person.
All of these are so easy to make and twist to suit your own tastes that the possibilities are endless. That being said, what is your favorite oatmeal combo this fall?
