Eggs (Lightly Beaten) 3
Onion (chopped) 1 (medium)
Tomato (Chopped) 2 (large)
Potato 1 (medium, chopped)

Ginger garlic paste 1/2 tsp

Oil 1 wooden spoon
Procedure:
Heat oil in a pan and add chopped onions. Fry until light brown. Next add ginger garlic paste and fry for a minute. Next add chopped tomatoes and fry until oil separates. Now add chopped potatoes and fry for a minute. Then add all the spices and fry for few more minutes. Next add some water and cover the pan & cook on low flame. Cook until potatoes are done, And oil separates and water has dried up.
Now add the beaten eggs and stir well, Cover the pan and let the eggs cook until oil separates. Add coriander leaves before a minute of turning out flame. And mix well. Serve with roti/ bread.
