Hot and Sour Soup

Winters favorite starter of people all around the world is soup!! Today I'll share with you the recipe of Hot & Sour Soup!!



Serves: 6

Ingredients:

Chicken with bone                            250 gm (about 5-6 pc) or 1 cup boiled and shredded chicken
Water                                                 6 cups or 3 cups stock
Garlic                                                2 cloves
Salt                                                    1/4 tsp
Black Pepper                                     1/4 tsp
White Pepper                                     1/4 tsp
Chinese Salt                                       1/2 tsp
Green Chili                                        1
Soya Sauce                                        1 tbsp.
Vinegar                                              2 tbsp.
Ketchup                                             2 tbsp.
Chili Sauce                                        2 tbsp.
Eggs                                                   1 lightly beaten
Cornflour                                           2 tbsp. dissolved in some water
Wooster Sauce                                   2 tbsp. (Optional)
Cabbage                                             1/4th chopped (small size)
Carrot                                                 1 chopped finely
Spring Onion leaves                          1 chopped
Capsicum                                           1 small, chopped


Procedure:

Put the chicken, salt, Chinese salt, green chili, garlic, black pepper, white pepper & 6 cups of water in a pot & let it boil on low to medium heat for 30-35 minutes. Until then chicken will be tender and u will be left behind with a nice amount of stock. Remove chicken pieces, garlic & green chili from the stock and keep them aside to let it cool a little. Or use 2-fork method to shred the chicken finely apart from bones. Discard green chili & galric.

Next add all the finely chopped veggies, shredded chicken & sauces (chili sauce, vinegar, soya sauce & vinegar) into the stock. Add the cornflour while stirring continuously and let the soup simmer on low- medium heat for 15-20 minutes, until it thickens. (You can increase the quantity of cornflour if you want more thickness)

Now add the lightly beaten egg and quickly stir with spoon to let it form threads as it cooks.

Let the soup remain on medium low heat for 5 more minutes & serve hot with sauces!!
