Ingredients:

For Dough Making
  • 2 and a 1/2 cup of all purpose flour
  • 3/4 cup of Warm Milk
  • 2 and a 1/2 tsp of instant Yeast
  • 2 tbsp of warm Water
  • 2 and a 1/2 tbsp of melted unsalted Butter
  • 1/2 tsp of salt
  • 1/2 cup of Icing Sugar
  • 1 egg lightly beaten
  • 1/2 tsp of Vanilla essence (or cinnamon/nutmeg)
  • Oil for deep frying
  • Doughnut Cutter (if you don't have you can use cookie cutter and a cap of bottle too)

For Chocolate Glaze
  • 100 grams of Cooking Chocolate
  • 1 tbsp of Milk
  • 1 tablespoon of unsalted Butter
  • 50 grams of Cadbury Block
For Colored Glaze
  • 1/2 cup of confectioners Sugar
  • 1/2 teaspoons of Milk or Cream
  • 1 teaspoon of Vanilla essence
  • Desired Food Colors Pink and Blue

    Procedure to be followed:

STEP 1 : In a large bowl, mix all together the dry ingredients first; Yeast, Flour, salt and sugar together with a spoon. After mixing, pour over unsalted butter, vanilla essence, egg, warm milk and warm water. Knead it for all about 4 to 5 minutes into a nice dough. Leave dough in a warm place, by covering it with a cling wrap. I kept it in a microwave for about 2 to 3 hours. Let it be at least doubles in size.

STEP 2 : Take out your dough. Knead it again to knock out the air inside, you can dust extra flour over your working space to knead it. With the help of rolling pin and doughnut cutter, cut the doughnuts out, leaving almost 1/2 inch of thickness.

STEP 3 :  Now leave your doughnuts again for 1 hour. Let them to rise again.

STEP 4 : Prepare Oil for deep frying them on a low medium flame. Make sure to fry them not on high otherwise the doughnuts will remain uncooked from inside. change its side too while frying them.

STEP 5 : Chocolate Glaze : either by using double boiler or with microwave for about 20 to 30 seconds only (depending upon your microwave too), combine all ingredients (cooking chocolate, Cadbury Blocks, Butter and milk) in a bowl and make a rich chocolate glaze out of it by stirring it continuously with the use of spatula. Set it aside, allow it to cool at room temperature

STEP 6 : Colored Glaze: in a bowl mix confectioners sugar and vanilla extract. Stir in milk or cream. 1 teaspoon at a time till desired consistency.

STEP 7 : Dip your doughnuts in a mocha chocolate sauce, let the chocolate to set for few minutes and enjoy...

    TIPS:

    • Make sure while making dough, do not add yeast directly over salt and sugar. This can really slow down the yeast reaction.
    • Make sure  your doughnuts or sauce are not too hot otherwise you will not get a rich texture of Chocolate on doughnuts.
    • If the dough is getting too sticky add some flour about half or quarter cup to handle it properly. You can dust more flour from time to time.
    • You can refrigerate your dough for the next day as well. When needed take them out to the room temperature and let it rise a little. Then knead, roll on and fry as described in the procedure. You can have them in your breakfast too with a cup of coffee or Tea.
    • You can store and refrigerate prepared doughnuts into refrigerator. But for best taste i recommend you to either make in half quantity as I did or consume it by the day you fry them for fresh taste.
    • Have some Leftovers? Do not worry little heat up in the oven or microwave, although it will melt some glaze. But it can be a wonderful doughnut as before.
