Every time winter vacation comes around, I attack recipe books with a new vigor looking for different things that I can make for all of the get together and holiday parties that start happening almost as soon as the month begins. No matter if the person says you should bring food or not, I always end up bringing something so that I know I will be able to eat at least one of the things while I’m there and, as it turns out, everybody else wants to eat it too. This past week, I went to a friend’s house for just a relaxing day with all of my friends that I haven’t seen since summer. We all brought something to munch on while we watched the movie and thought, what’s a movie without popcorn.
If you don’t know by now, I have a quite large sweet tooth in me and am constantly trying out different products and creating delicious treats in hopes to satisfy it. For me, Caramel Corn is the perfect combination of salty and sweet and is one of my favorite things to eat around the holidays, especially when it is still warm and sticky. Yum! I usually end up eating half of the batch right off the pan and the other half usually goes to my sister and dad. The mooches. The good part is that it is so easy to make for yourself that you can instantly get started on the next batch while you eat the one you just finished.
The only probably is that most Caramel corn out there is not Vegan. What?! Not vegan?! How?! I know right. Anytime someone sees me snacking on this recipe they always point out “didn’t you tell me caramel corn isn’t vegan?” Yes. Yes I did. But instead of using many of the normal recipes that are available for caramel corn, I have messed around and come up with an amazing imposter that no one would ever be able to tell is any different that all of the versions they have had before.
