I know many of you foodies love turkey, especially around holidays.

Whether it’s Thanksgiving, Christmas or a family get-together, you just can’t go wrong with turkey, right?

But I want to know, what do you do with the leftovers?

And what if it comes out a bit dry or overcooked?

Do you throw it away?

Well, don’t! Because all is not lost. There is a way to make it delicious again and it’s easier than you might think.

One of my favorite quotes by Antoine-Laurent de Lavoisier (18th-century French chemist) says that ‘in nature, nothing is created, nothing is lost, everything changes’.

I know it may sound a bit academic, but I think it makes a lot of sense in the kitchen.

I mean, think about it for a second. Don’t we all throw away leftovers without giving it a second thought?

But at the same time, don’t you hate it when you waste food?

So if we were to heed this theory we shouldn’t get rid of leftovers. Instead, we could try to make something else of them.

And that’s exactly what I did today.

I had some leftovers from a huge roasted turkey and instead of wasting them away, I made a delicious leftover Turkey Noodle Soup which is probably the best turkey soup ever.

And it’s not just delish, but it’s also healthy. It has plenty of ginger and garlic which makes it perfect to fight the cold weather blues.

Yet, that’s not all. You can make this turkey Noodle Soup recipe in under 30 minutes and it’s so easy even a kid can make it.

Just take a look at the recipe and you’ll notice that it has only 5 easy steps.

Now, I know most foodies like chicken more, so I have a tip for you. You can replace the turkey with shredded leftover chicken, or even rotisserie chicken.

You don’t need to change anything else, just the meat.

So if you have one big roasted chicken that you just can’t gobble up entirely, this would be the best way to make use of what’s left.

How to make turkey noodle soup with leftovers


Leftover Turkey Noodle Soup Recipe

An easy turkey noodle soup recipe that you can make with leftovers and in under 30 minutes

  • 1.2L or 5 cups chicken stock
  • 1 medium carrot (thinly sliced)
  • 1 small parsnip (peeled and sliced)
  • 1 small onion (diced)
  • 1 red bell pepper (chopped)
  • 2 garlic cloves (minced or pressed)
  • 3 Tbsp minced ginger or ginger paste
  • 1 Tbsp butter
  • 80g/3oz medium egg noodles
  • 200g/7oz shredded, cooked leftover turkey ((or chicken))
  • 200g/7oz frozen peas
  1. Melt the butter in a large pot over medium heat.

  2. Cook the onion, ginger, garlic and parsnip in butter until tender, for about 5 minutes.

  3. Stir in bell pepper, carrots, peas, turkey leftovers, then pour in the stock, and add noodles.

  4. Bring to a boil, then reduce heat and simmer for 15 minutes.

  5. Season with salt and pepper if needed, and enjoy it warm!

TIPS:

You can replace the turkey with shredded chicken (leftovers or rotisserie). Everything else stays the same
