Estonian Potato Flat Bread with topping. Kartulipletskid täidisega

As I wrote last year,  Pletskid is food from difficult and complicated times. Because of a lack of eggs and everything, children invented ” bread”, to get something to eat. They mixed potatoes, flour and oil and baked this on to the wood burning stove iron.

Now are better times and we can add toppings.

What topping? This is depending on your imagination, but I suggest one option

Estonian Covered Potato Flat Bread. Kartulipletskid

  • Servings: 4 pcs

A light street food flatbread from potatoes



Ingredients

  • 1 raw potato, grated
  • 100 ml flour
  • 1/2 tablespoon oil
  • Filling

  • 100 g sour cream
  • sliced leek
  • 100 g -200 g sliced bacon
  • chopped oregano, marjoram, basil

Directions

  1. In a medium bowl, toss together 3/4 of flour, grated potato and other ingredients. If you like, add some salt all other spices. Let set 10 minutes
  2. Knead the dough and add other flour. Knead. Knead. Knead. The dough has to be like very -very soft plasticine
  3. Let the dough to set 10-15 minutes.
  4. Share dough into the 4 balls and spread by hand flat.
  5. Put flat dough balls between two baking paper and roll Pletski paper-thin.  Spread with sour cream and sprinkle over chopped leek and bacon and greens.
  6. Using the baking same paper put Pletskid on to the oven rest and bake at 200 C for 10 minutes.
