Coffee Cake in a Kadai

  1. Eggs_two large
  2. Flour_3/4 cup
  3. Powdered sugar_3/4 cup
  4. Sunflower oil_2 tbsp
  5. Hot milk_ 4tbsp
  6. Coffee powder_3/4 tsp
  7. Baking powder_1/2 tsp
  8. Baking soda_two pinch
  9. Salt_a pinch


  • Sift the flour twice and keep aside.
  • Mix hot milk with coffee powder and mix well.
  • Grease a 6 inch baking pan with oil and line parchment paper.
  • In a large dry bowl add two eggs; start beating until mixed well.
  • Then add powdered sugar in three additions and beat on high speed until fluffy.
  • Add oil and beat on low speed for few seconds to combine.
  • Place a strainer on top and add saltbaking powder and  baking soda.
  • Add 1/3 part of the flour and sieve.
  • Fold gently to combine well.
  • Add 1/3 part of the milk coffee and fold gently.
  • Then add 1/2 part of the remaining flour; fold it.
  • Add remaining milk,followed by flour and milk.
  • Pour in to greased baking pan and tap.
  • Heat a Kadai on low flame placing a small stand inside for  minutes.
  • Place the baking pan on top of stand and cover the Kadai tightly.
  • Cook on low flame for about 35_40 minutes or until done.
Apply whip cream frosting on top.
