Ragi is an extremely nutritious millet that resembles like mustard seeds. We can include it in our diet in many different ways. Here is a healthy Cake recipe using powdered ragi flour.
Ingredients:
- Egg-one large
- Melted jaggery-3/4 cup
- Oil-1/4 cup
- Ragi flour-3/4 cup
- Wheat flour-1/4 cup
- Baking soda-1/4 tsp
- Baking powder-1/2 tsp
- Cocoa powder-2 tbsp
- Pre-heat a heavy bottom pan with tight lid on Low Flame for 10 minutes. (place a small stand inside).
- In a mixing bowl; add one large egg.
- Mix it well using a hand mixer for a minute.
- Add melted jaggery and oil; mix well.
- Place a strainer on top and add all the remaining dry ingredients.
- Mix well gently until well combined (do not over mix).
- Pour the batter in to a lined 6 inch baking tray.
- Place it inside the pre-heated pan and cook on low flame for 35 minutes or until done (insert a skewer and check whether it comes out clean; if not cook few more minutes).
- Allow the cake cools down completely before slicing or frosting.
