Sweet Diamond Cuts


Sweet Diamond Cuts is an easy fried snack. It can made bulk in quantity for special occasions and store them up to one month. It includes in popular Diwali sweet menu. You can make it's
 spicy version too. But now it's the time for sweet tooth's 😊
Ingredients:
  1. Wheat flour- 1/2 cup
  2. All purpose flour (maida) -1 cup
  3. Ghee-1 tbsp
  4. Salt-to taste
  5. Sugar- 1/4 cup
  6. Cardamom powder- a pinch
  7. Oil-for deep frying
Preparation:
  • In a large bowl;  mix wheat flour, flour, salt and hot melted ghee Crumble it well.
  • Add water little by little and make a smooth dough.
  • Cover the dough and let it rest for 15 minutes.
  • Now divide the dough in to two or three balls.
  • Take a ball and roll it in to thin circle (thick like poori) by sprinkling flour in a rolling surface.
  •  Cut them into small diamond shapes by using a sharp knife.
  • Prepare all the diamond cuts and deep fry them in hot oil until nice golden in color.
  • Drain in to colander and keep aside.
  • Heat sugar in a pan by adding two tablespoons of water.
  • Melt the sugar until reaches a two string consistency (stick well in hand while touching)
  • Add cardamom powder; mix well.
  • Add fried diamond cuts and mix well quickly and carefully without breaking the diamond cuts.
  • Switch off the flame and place them into a wide bowl to cools down completely.
  • After cools down it will become crisp and non-sticky.
  • Separate each one and store them in an airtight container for long use.
Note: After frying the Diamond cuts; allow to cools down completely and then you can coat them with powdered sugar instead of sugar syrup. But the above method results more tasty and crispy bites.
