  • eggs - you can omit the eggs if you’re allergic or follow a vegan diet — just stick to the avocado toast instructions instead.
  • white vinegar - white wine vinegar or lemon juice in equal amounts will also work here.
  • sliced whole grain bread - use an oval-shaped loaf that’s big enough to hold the egg but not so big that there’s a lot of empty surface around the egg. If you think you might need to add a second egg, the loaf is probably too big.
  • avocado - check to make sure the avocado is perfectly ripe by giving it a gentle squeeze — if it gives a little bit, it’s ready to enjoy! This recipe is a great way to use up any avocado that is in your fridge that you need to use ASAP before it starts to go bad.

  • parsley - if you can’t find fresh parsley, dried parsley flakes will also work! You can also substitute with any fresh herbs that you like. Try dill, cilantro, or oregano.

You will also need a medium saucepan, slotted spoon, and toaster.

For added flavor, add more toppings. We added fresh parsley and also sprinkled on some sesame seeds and a drizzle of chili oil. Some other great options include paprika, pickled red onions, olive oil, nuts, or feta cheese.

How to Make the Best Avocado Toast with Egg

  1. Crack eggs. Crack each egg into their own small bowl, being careful not to break the yolk.
  1. Poach the eggs. Bring a medium saucepan filled with water to a boil, then add vinegar. Lower heat until water is simmering. Gently lower the eggs into the simmering water and cook for 4 minutes, or until egg whites are set and yolks are soft and runny. Carefully remove the eggs with a slotted spoon.
