My Week In Pictures – Lockdown 3.0 Week 6

Happy Sunday friends. Can you believe another week had gone by? It’s been half term for me from most of my ballet classes and normally I would have gone away somewhere but obviously not this year! Last year Steve and I went on a rather soggy break to Falmouth for a few days and discovered some amazing little spots for dodging the rain. Won’t it be great when we can travel again?

Pancake Day

Thankfully this year Pancake Day fell during half term which was fabulous. It meant that Steve and I could have pancakes twice; for lunch and dinner. That’s the dream, right? For lunch, I made these chilli sweetcorn pancakes with a cool cucumber salsa and fried eggs. It was seriously tasty and a nice alternative to the traditional at lunchtime.

The sweet pancakes came later after supper and were delicious. I used this recipe from Melissa Hemsley but subbed quinoa for oats. https://melissahemsley.com/perfect-pancakes-melissa-hemsley/

Mother Root

Earlier in the week, I was contacted by Mother Root, a sophisticated, award winning aperitif that is 100% alcohol-free and all-natural.

I can’t rave enough about Mother Root in all honesty. It’s delicious served warm as an alcohol-free hot toddy on rainy cold evenings, mixed with tonic or soda with a wheel of citrus and sprig of rosemary as a pre-dinner drink but also mixed up as a Campari cocktail with a dash of sparkling water.

There is one cocktail that Mother Root has recently posted on their Instagram that I am desperate to try. Mother Root mixed with pomegranate juice and a little soda water. To make it alcoholic add a measure of vodka instead of the soda.

With this in mind, I added pomegranate to my shopping list for this weekend and plan to make a little Sunday night alcohol-free cocktail to toast the end of half term.

If you fancy finding out a little more about Mother Root and maybe want to buy yourself a bottle then head on over to their website here. If you sign up to their mailing list you can get 10% off your purchase.

Hot Chocolate In The Rain

It’s been raining all week which does tend to put a downer on things but when you can meet a friend for a little exercise and a hot chocolate it makes the rain seem not so bad. Also, it gives me a reason to get my pretty umbrella out, a delightful Christmas gift from my sister Estella.

Coffery & Co

I opted for their fair-trade and organic Sumatra blend that reminded me of holidaying in Italy. The flavour profile similar to that amazing coffee you get in the tiny Italian bars that nestle next to beautiful piazzas. In fact, it took me right back to times gone by when travel was an option. Sigh!

I ground the coffee beans myself (although you can have them delivered already ground so don’t panic) and used my Hario V60 to brew the coffee then topped it with frothed milk. Don’t judge me. I love froth! If you fancy trying a local coffee delivery service then maybe check out Coffery & Co?

Soft Rock Night

Steve has created a wonderful little haven in our shed that is now our local pub “The Lyngarth Arms”. This Saturday was Soft Rock Night so we got dressed up, opened the pub snacks, and danced the night away to some great tunes. Steve was in his element as DJ!

Next Week

Next week I am back to full-time zooming. My ballet classes recommence and my schedule is looking full. Hopefully, I will be able to get some fun stuff in to share with you. I must get baking too, it’s been a while since I posted a recipe. What do you fancy? Sweet or savory?

Anyway friends. It’s been lovely chatting with you. Have a great week. Let’s hope for better weather so outside activities can resume.
