Applesauce Bread

This oil free vegan Applesauce Bread is moist from inside and very easy to make. Its yeast free, made with whole wheat flour, naturally sweetened with dates, fluffed with chia seeds, flavored with warming spices and garnished with hempseeds. It’s a healthy recipe to enjoy for breakfast or snack.

Many of us usually have loads of applesauce sitting in our refrigerator and we wonder on how to utilize it. So therefore, I came up with idea of baking it into a bread.

Even though I like to make my own applesauce which I did in this recipe you may use your own if desired.

I tested this recipe with few variations and finally settled with dates as sweetener. Even though dates make it a bit sticky from inside but it’s totally worth. Firstly, dates are healthier than other processed sugar and it’s a natural ingredient. Secondly, it sweetens this recipe to perfection without making it overly sweetened or under.

Therefore, after many trials, I finalized it with this combination.

So, here I am to share this Applesauce Bread recipe with you:

Ingredients you will need:

Apples
Date
Cinnamon
Lemon juice
Water
Wet ingredients
Dairy free milk
Dates
Soaked chia seeds
Vanilla extract
Apple cider vinegar
Dry ingredients
Whole wheat flour
Baking powder
Baking soda
Salt
All spice
Cinnamon
Cardamom
Walnuts
Garnish
Hempseeds

Ingredients notes:

  • Apples – I used red delicious apples here so they are naturally sweet. This in turn helps us to make this recipe healthier.
  • Dates – I used pitted dates to naturally sweeten this bread recipe. Its high in fiber and a great source of antioxidants. They promote brain health and also natural labor. Its rich in iron and is loaded with many vitamins.
  • Walnuts – it’s a low GI food with many health benefits. It’s a great source of omega-3 and promotes healthy gut health.
  • Chia seeds – it’s a superfood that works great as an egg substitute. I soaked it in warm water for a quick jelly like consistency. Its high in fiber and antioxidant along with protein.
  • Hempseeds – it’s a protein rich superfood which works excellent as a garnish in this recipe. It helps in making the outer layer of this healthy applesauce bread slightly crunchy. At the same it adds nutrition to this recipe as well.

Therefore, I have used natural ingredients. I would insist you to quickly go through its steps and get started with this baking project because you and your family are gonna love it to the cor.

How to make Applesauce Bread

Firstly, I peeled and chopped apples and cooked in some water, cinnamon, date, lemon juice until they were soft. Once done, I turned it off and let it cool.

Secondly, I combined cooked apples in a blender and blended it smooth and kept it aside.

Next, I blended all the wet ingredients in a blender and kept it aside.

Thereafter, I combined all the dry ingredients in a mixing bowl and mixed it well.

Afterwards, I folded in all the ingredients in the mixing bowl and whipped into a thick sticky batter.

Then, I spooned it out in the prepared loaf pan and gently tapped it to evenly spread.

Later, I garnished its top with hempseeds and placed it in the middle rack of the preheated oven to bake at 350-degree Fahrenheit for about 50 minutes.

Once done, I tested it by inserting a toothpick at its center. Then, I turned it off and took it out.

Lastly, I let it cool down completely for about 30 minutes and then sliced gently.

This was mind blowing and super delicious. We have been gorging on this whole wheat applesauce bread for the entire week.

I personally like it smeared with vegan butter. My husband likes to have both butter and maple syrup. Whereas my girls like it with maple syrup.

I simply toast them in my toaster oven and serve for breakfast and sometimes as evening snack.

Expert tips:

  • If in a hurry, place the cooked apples in the refrigerate for 5 minutes to cool down. Then blend it and keep it aside in the room temperature until ready to use.
  • Just when starting with the recipe, soak chia seeds and keep stirring for 2 minutes. It will form jelly like immediately. Same for dates and let it soak until soft and drain thoroughly.
  • Make sure to follow the measurement of the liquids because measurements play an important part in baking.

How long does it last?

I usually like to eat a slice while its warm but refrigerate the slices in an air tight container for about 1 week. Simply toast it in toaster oven and smear vegan butter or maple syrup or both before serving.

Is it healthy?

Yes, I made it with whole wheat flour which in minimal processed and is fiber rich. I added chia seeds and hempseeds to add nutrition to this recipe. At the same time, I made it oil free and sweetened it with dates so as to avoid processed sugar. Therefore, this recipe is made with minimal processed ingredients and can be enjoyed as everyday breakfast or snack.

How does it taste?

Its taste very much like bread but mildly sweetened. It has a nice aroma of cinnamon and a hint of apples. Its soft and moist from inside.

Is it dense?

Is it not super dense but it is slightly sticky in the inside because of dates. So, while slicing you may feel its sticking to the knife but it will come out pretty easily as well when you try to release it.

Can I freeze this bread?

I have not tried freezing it because I like to bake it fresh and moreover it vanishes very quickly in my house.

Ingredients

Applesauce

  • 2 whole red delicious apples (peeled and chopped)
  • 1 pitted date
  • 1/2 tsp lemon juice
  • 1/4 tsp cinnamon powder
  • 1/4 cup water

Bread

    Wet ingredients

    • 1 cup unsweetened dairy free milk
    • 3/4 cup pitted dates (soaked in warm water and drained)
    • 2 tbsp chia seeds (soaked in warm water)
    • 1 tsp vanilla extract
    • 1/2 tbsp apple cider vinegar

    Dry ingredients

    • 2 cups whole wheat flour
    • 2 tsp baking powder
    • 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1 tsp ground all spice
    • 1/2 tsp cinnamon powder
    • 1/4 tsp cardamom powder
    • 1/2 cup chopped walnuts

    Garnishing

    • 1 tbsp hempseeds

    Instructions

    • Preheat oven at 350-degree Fahrenheit and prepare a 9-inch loaf pan by greasing it and placing a parchment paper in it. Keep it aside. In a saucepan combine all the ingredients of applesauce and cook at high for 5 minutes or until the apples softens. Stir at intervals to make sure it does not stick at the bottom. Turn it off and let it cool. You may put it in the refrigerator for quick cooling as well.
    • Once cooled combine the cooked apples in a blender and blend it smooth. Spoon it out in a glass container and keep it aside.
    • In the same blender combine all the wet ingredients of the bread (milk, drained dates, soaked chia seeds, vanilla extract, apple cider vinegar) and blend it smooth. Keep it aside.
    • In a large mixing bowl combine all the dry ingredients of the bread and mix well with a spoon.
    • Now, fold in wet ingredients and applesauce to the dry ingredients and mix well until a soft yet thick sticky batter is formed.
    • Spoon out the batter in the prepared loaf pan and spread it by tapping lightly. Garnish its top with hempseeds and place it in the middle rack of the preheated oven. Bake it for 45-50 minutes. Insert the tester at the middle of the bread, it should come out clean. Do not exceed baking time more than 60 minutes or it will taste burnt.
    • Turn it off and take the bread out of the oven. Let it cool for 10 minutes and gently take out with the parchment paper from the loaf pan and place it on a flat surface. Now let it cool completely for about 30 minutes before slicing.

    Notes

    • Soak dates only until they are soft enough to be blended nicely ( about 5 -7 minutes).
    • Make sure to drain the date thoroughly. No extra liquid other than mentioned in the recipe should be included in this bread. Or else the bread will take time to cook and will become stickier.
    • Soak chia seeds in warm water and keep stirring until they form jelly like consistency. (about 3-4 minutes).
    • Since we have used dates in this recipe when slicing the bread, you will notice that its inside it slightly sticky. This is normal. As each slice cools down it becomes firm. It tastes delicious when warm or at room temperature.
    • While slicing if you feel that the inside of the bread is still warm and its sticking to the knife, then slice bread at intervals letting it cool from inside. I like to cut one slice and then let it cool again for 2 minutes. Then, I cut another slice and let it cool again. I sometimes follow this step and it works great.
    • Refrigerate the slices in an air tight container for about 1 week. Simply toast it in toaster oven and smear some vegan butter or maple syrup or both.
    • This recipe will make 12 thick slices and the serving size in one slice per person.
    • This recipe makes about 1 cup of applesauce.
