Healthy Five Ingredient Granola Snack Bars

Have you read the labels on granola or snack bars lately?  They contain ingredients that will make you cringe, or are challenging to pronounce.  Most contain a great deal of unhealthy fats and sugar.  I purchase good quality bars occasionally, but still prefer to make my own.  I always keep one in my purse for times when I feel a craving coming on!

This recipe contains five ingredients that are super healthy and full of healthy fats and fiber:  dates, pure maple syrup, almond butter, oats and your choice of nuts and/or dried fruits.

Five Ingredient Granola Snack Bars

Makes 10 bars

Ingredients

  • 1 cup pitted dates (generous cup)
  • ¼ cup pure maple syrup or honey
  • ¼ cup natural peanut butter or almond butter
  • 1 cup unsalted nuts of your choice
  • 1 ½ cups large flaked oats
  • ¼ cup chopped dried fruit or dark chocolate chips (keep in mind that some dried fruits are very sweet and will add to the sweetness level)

  • Pinch of Celtic Sea Salt (optional, and then becomes six ingredients!)
  1. Preheat oven to 350°F
  2. Line an 8×8 baking dish with parchment paper.  You can use small binder clips to secure the sides of the pan
  3. Toast oats and nuts on a baking sheet for 10-15 minutes, stirring occasionally until golden brown.  Please do not skip this step.  The oats will taste raw and toasted nuts are amazing!  Set aside and let cool
  4. Process dates in a food processor for one minute until mixture forms a ball
  5. Place oat/nut mixture, dates and dried fruit in a large mixing bowl
  6. In a small saucepan, heat maple syrup/honey and peanut/almond butter over low heat until combined
  7. Pour over oat mixture and combine thoroughly
  8. Spoon into prepared pan and press down firmly.  Use the back of a spoon and go around the edges of the pan to push the mixture down and create straight lines.  Keep pressing down firmly and evenly to ensure the bars set up well and don’t fall apart
  9. Cover with plastic wrap and refrigerate for several hours
  10. Remove from pan and slice evenly into 10 bars.  You can also slice into squares

Enjoy your healthy snacks!

Kitchen tip:

I like to wrap each bar individually and keep in the fridge to grab and go.  They also freeze very well.  You can leave them at room temperature for a few days but with warmer weather, I find the bars tend to get softer.
