Imperial Measures Distilling, Thebarton

ADELAIDE | Imperial Measures Distilling was founded by bartenders and friends Chris Jones and David Danby in 2014. Motivated by the ‘Gin Renaissance’ that was occurring overseas, and was just starting to take root in Australia, the duo decided to delve into the art of distilling. In 2015 they released their first gin, Ounce Gin ‘Signature’, and haven’t looked back since.

They moved into their current location in Thebarton in early 2018, followed shortly by their bar and cellar door ‘Ounce Bar’. There’s the front bar featuring the full Imperial Distilling range, other spirits for cocktails, a single local craft beer tap, and a six-item wine list. Around the corner is an open space looking across to the distilling equipment, with a communal table and assorted seating.

Both the ‘Signature’ and ‘Bold’ gins are top notch, whether enjoyed straight, on the rocks, or as part of a cocktail. Something that you should definitely try is the Mandeaux Liqueur. It’s a French-style liqueur made from Imperial Mandarins sourced from Imperial Measures’ neighbours and friends in Thebarton. Hyper local, and very delicious. The Ruby Bitter, an Italian style amaro consisting of 12 botanicals, is also great.

For food, it’s a small selection of delicious burgers. There’s the signature beef smash burger, a haloumi burger, a vegan burger, and a rotating special burger.
