SYDNEY | Modus Operandi Brewing Company was founded in 2012 when husband and wife Grant and Jaz Wearin decided to turn their dream of owning their own brewery into a reality. They spent six months travelling around the USA in a campervan learning as much as they could from some of the best in the industry and in 2014, the brewery itself opened in Mona Vale.
Modus Operandi is Latin for Method of Operation, and is the philosophy that’s applied to the beers that are made here – quality Beer that takes no shortcuts. Fresh live yeast is flown in from the USA, specialty malts and hops are sourced from around the world, and all beer sold on and off premises at other venues is kept cold at all stages of its life. The result is beer that’s as fresh as it comes, with zero preservatives.
For those who want Modus Operandi’s beers as fresh as possible, their Mona Vale brewpub is the best place to visit. Here you can get the full core range of beers, along with seasonal and one-off specialties. For us the Former Tenant, a 7.8% Red IPA is a must try, and one of the best examples of its style in Australia. It tastes of passion fruit and mango due to the mosaic and galaxy dry hops, and a caramel malt finish. The Sonic Prayer IPA is another highlight, with a hoppy citrus explosion thanks to pacific, motueka, cascade and jade hops. Tasting paddles are offered so you can try a few things if you want. For those who don’t feel like beer, there’s also cider and wine available.
The food here is very decent too. A full kitchen pumps out an assortment of American influenced gastropub favourites like burgers, wings, tacos and pizzas. And if you want to take away beer, check out the fridge for large 1 litre cans, or get the staff to use their ‘Canimal’ to fill and seal a can straight from the taps.
