I usually peel potatoes first and then chop them into small parts and put them on the heat with water and salt. In this way, the potato will be soft after cooking. If you like, you can boil unpeeled potatoes and then peel them. While boiling potatoes, we can chop onions and saute them with turmeric in oil. The color of the onion must get brown-golden. Then remove onions from heat, puree potato, and add them to onions. In the last step, we add vegetables and herbs. Be sure to add the vegetables after removing the potatoes from the heat so that they do not lose their flavor and aroma. The combination of coriander and parsley gives samosa a good flavor. As you wish, you can add other aromatic vegetables.

How to roll samosa

Cut filo dough into one rectangle with low width and long length. If you want to make a small samosa as finger food, you can make rectangles smaller. Put ingredients on the corner in a triangular way and fold it the same way. Continue folding till the end.
Then cut the two sides of the pastry and use water to making two sides of filo dough together. Put some oils into the frying pan and fry samosas on both sides on medium heat so that they become golden in color and crispy. After frying, you can serve with any sauce you like.

How to make samosa in the oven

Frying samosa requires too much oil. If you want a healthier samosa plus using less oil, you can make samosa in the oven. If you use filo pastry, you can put samosa in the oven. However, you should mix egg yolk and milk and brush samosa with it.
