Hailing from the midwest state of Iowa, Cedar Ridge Distillery has a stellar reputation. They were the first distillery granted a license at the end of Prohibition, and have been setting an incredibly high standard ever since.

Their newest product, the Quintessential Signature Blend, is a new approach by Cedar Ridge. Opting for complete transparency, the entire process is laid out on the neck of the bottle.

The Quintessential Signature Blend is made through two separate distillations. One is 100% peated malt, the other 100% two-row barley. The former aged for 4-5 years, with the barley aged for 2-3 years. They are then combined in a ‘mother batch’ with previous versions. A portion is then removed for bottling with the rest remaining.

The taste is somewhat on the citric side, with some notes of black tea, rich roasted wood, and baked pastry. It has a complex and unique flavor like that of many craft whiskeys. 

Old Elk – Straight Wheat Whiskey

Old Elk is the love child between legendary entrepreneur Curt Richardson and master distiller Greg Metze. Born in 2013, Old Elk has developed a reputation for transcending the traditional whiskey production process, weaving innovation and experimentation into their products. 

The Old Elk Straight Whiskey, released in 2021 is one of the best American whiskeys on the market today. It is a blend of 95% wheat and 5% barley. The whiskey is aged through a slow proofing process by adding water over 2 and a half weeks.

The result is a light, smooth, buttery-tasting whiskey. There are light notes of wood and pecan, with a punchy ethanol aroma. Along with some of the spice notes from the oak barrel, the finish is one of a sweet, caramel, toffee nature.

This whiskey is redefining what it means to be a sipping whiskey. Not overly spiced, nor is it overly sweet. The buttery mouthfeel makes it easy to enjoy on any occasion.

The Virginia Distillery Co. – Courage and Conviction Dr. Jim Swan Batch 

This is the third single malt release for the distillery. It is not intended to be a huge deviation from the previous releases, with only a small variation on the cask selection, and the fact this has been aged for a full 4 years.

The result in flavor is slightly deeper, with richer honey, berries and sandalwood notes. The deeper notes of the profile have brightened slightly, giving a pop of tropical fruits.

This is a more refined option from the Virginia Distillery Co. It is always encouraging to see producers improving products wherever they can for their new releases.

Lost Lantern – 2021 Single Cask #8: Starlight Distillery Indiana Straight Rye Whiskey

This is the first example of one of the best whiskey brands that do not distill their product on sight. Lost Lantern is a nationwide company that sells some of the best American whiskeys. 

From the finest rye in Indiana, Starlight Indiana straight rye is crafted. With a more temperamental climate than its southern counterparts, this rye is often produced in harsher conditions. A lot of the grain in Southern Indiana is grown slowly and therefore aged in barrels extensively. 

This gives it a robust rye spice, with deep sweet notes of caramel and molasses. It is among the finest Indianan whiskeys.

Cascade Moon Editions – No.2

For our last recommendation, we are highlighting a top-shelf product. The second edition from Cascade Moon is perhaps beyond the limit some might be willing to spend on a bottle, but it is a special experience.

Distilled and bottled in Tullahoma Tennessee, the second edition was produced from a small batch blend around 2003. The new batch was produced in only 20 barrels, for at least 17 years.

It has a rather short finish, giving quite a refreshing feeling when first tasted. It is quite medium-bodied and has rounded, rich caramel notes. There is not too much more to say about this bottle than it is an unforgettable experience.
