Steps To Make Gordon Ramsay’s Mince Pies

1. Prep the Pastry

Add butter, icing sugar, all-purpose flour, and orange to a food processor and whizz them into fine crumbs. While the food processor is still working, add eggs to it and whizz until it forms clumps. Knead the dough until it’s smooth. Wrap it in cling film and chill it for at least 30 minutes.

Roll out the pastry into 24 rounds and use an 8 cm fluted cutter. Place them in the non-stick mince pie tins. Press them at the base and sides of the tin. Re-roll the trimmings and cut out star shapes from the dough and chill them for about 20 minutes. 

2. Prep the Filling (mincemeat)

To a large bowl, add pink lady apples, suet, golden raisins, diced dried apricots, brown sugar, orange zest, and orange juice. Mix them well to combine. Now, add lemon zest along with lemon juice, nibbed almonds, ground allspice, cinnamon, nutmeg, brandy, and dark rum. Whisk the mixture until smooth and a little runny. Cover it and then refrigerate it for about 30 minutes. 

3. Bake and Serve

Brush the pastry in the mince tin with egg wash and pour in the mincemeat. Place the star-sharped dough on top and brush it with the egg wash. Bake it in the preheated oven (180 C) for about 15 to 20 minutes. Remove from the oven and let it cool for a few minutes. Sprinkle some icing sugar and serve.
